THE PRODUCING PROCESS

SELECTION AND STORAGE OF THE OLIVES

CLEANING  

The Cleaner separates dirt, little rocks and leaves from the olives

WASHING
The olives are washed

with pressured water

MILLING
The Mill grinds or hammers the olives and pits into paste which is extruded onto the plates which go onto the press

CENTRIFUGATION
The centrifuge squeezes out the olive juice and oil and leaves behind

a fibrous "pomace"

FILTERING

The olive oil is separated from the water

BOTTLING
